This is my go to recipe for jollof rice. I prefer not to cook it plain so I sometimes add prawns and/or small pieces of meat or chicken and veggies like string beans, corn at the very end etc. The day I took this image I felt like adding a surf and turf twist to it. So I added chopped prawns and goat meat (neck fillet).
