I have had profiteroles one other time in my life. Actually twice.
The first time was store bought and I loved them. The extra light choux pastry filled with creamy goodness. Was it clogging up my arteries with every bite? Yes, and I really didn’t care because sometimes you just have to indulge and enjoy every second of it and then pay for it afterwards anyway you can (workout, take the stairs, lemon dressed salads only for a week… etc.). I realised much later that these profiteroles were minuscule compared to my more recent experiences.
The second time was at a restaurant famous for its beef. I had the taster dessert that had 1 medium sized profiterole (imagine my disappointment…just 1?!).
In comes Alex of XO Bakery. I initially contacted him about gluten free pastries and he gave me some recommendations. When I was ready to order a few weeks later the thought of gluten free had skipped my mind so I just ordered a box of 6 Vanilla profiteroles.
Imagine what it feels like to crawl into a warm soft bed, your skin caressed lovingly by the silk sheets swaddling you like a baby. Utter Indulgence. Absolute comfort. You are home. Surrounded by the people and things you love and love you.
This was my experience eating this profiterole. If you are not into pastries, please just find that thing that makes you feel like this and hold on tight! If you are into pastries and you feel the same way I do, then I am sure you can relate.
